yummy apple maple cupcakes



Voila! My experiment of the day.. apple maple cupcakes, delicious, fluffy and beautifully easy .

1 cup brown sugar
1 cup yogurt
1/2 cup canola oil
3 eggs (lightly beaten)
1 1/2 cups of flour
1 tablespoon baking powder
3 apples
maple butter (about 1/2 cup)

Heat oven at 350 degres. Butter and flour a muffin pan. Peel and cut the apples in thin slices.
In a bowl, combine sugar, yogurt, oil and eggs. In a second bowl, combine flour and baking powder. Add, a small amount at a time, the flour mixture to the liquids just until combined.
Fill each muffin cup with the dough to 1/3. Add a layer of apples. Cover each cup until filled. Garnish tops with sliced apples.
Cook in center of the oven for approximately 25 minutes.
Once done, let cool before demolding (it's important to be patient here.. trust me, it's worth it).
Last step: smear the tops with maple butter. yum!
